Orzo Salad

This is a festive dish that is unbelievably easy to put together and bursting with flavor, particularly with Jar Goods Classic Spicy Tomato Sauce.

Ingredients:

  • 3 cups cooked orzo (cook according to directions on the package)
  • 2 tablespoons pine nuts
  • 3-4 tablespoons Jar Goods Classic Spicy Tomato Sauce
  • 1 tablespoon extra-virgin olive oil
  • 2 tablespoons chopped basil
  • 1 teaspoon chopped oregano
  • ½ cup mixed olives, pitted and halved
  • 1 teaspoon fresh lemon juice
  • ¾ cup crumbled feta cheese
  • Salt and pepper to taste

Method:

  • In a large bowl, combine all the ingredients and mix well.  You want to make sure the orzo is evenly coated with the liquid ingredients and there is an even distribution of orzo, feta, olives, pine nuts and herbs for a deliciously varied flavor in every mouthful. 
  • NOTE: if you have a toaster oven or a small skillet, it may be nice to lightly toast the pine nuts.  Just be careful you watch them closely as pine nuts can go from a nice toasty color to dark brown very quickly.
