Chicken Curry

Our take on a curry is so much easier to make than the traditional approach. With minimal ingredients, you’ll be enjoying a delicious flavorful meal in no time.

  • 1 tbs coconut oil
  • ½ cup white onion, chopped
  • 1 tbs garam masala
  • 1 jar Vegan Vodka Sauce
  • ½ - ¾ cups chicken stock
  • 1 ½ lbs boneless chicken thighs cut into 1” pieces
  • Fresh cilantro for garnish
  • 2-3 cups fresh spinach -- optional

Heat the oil in a large heavy skillet over medium heat. Add the onions and cook until they are just turning translucent. Add the garam masala and mix to incorporate. Turn the head to low then stir in the Vegan Vodka sauce. Next, add ½ cup of chicken stock. Reserve the remaining ¼ cup if the mixture is too thick after cooking. Continue to stir for a couple of minutes.

Add the chicken pieces and simmer for 10 - 15 minutes until the chicken is cooked through. If the sauce looks too thick, add a little chicken stock at time until desired consistency is reached. Bonus: If you are looking to get your veggies in for the day, stir in the spinach in the final minute of cooking just to allow it to wilt.

Serve over jasmine or basmati rice, garnished with fresh cilantro and enjoy.
