Cheesy White Bean Bake

This cheesy, saucy, yummy dish is a cold weather crowd pleaser. It's a simple recipe that only takes one dish to prepare!

  • ¼ cup extra-virgin olive oil
  • 4 large cloves garlic, thinly sliced
  • 2 cups fresh spinach
  • 1 jar Classic Red
  • 2 (15 - ounce) cans white beans (cannellini or Great Northern), drained of liquid
  • Coarse salt and pepper to taste
  • ⅓ - ½ lbs shredded mozzarella cheese

Preheat oven to 450 degrees. Using a 10-inch deep dish skillet, heat the olive oil over medium high heat. Saute the garlic until slightly golden brown, about one minute. Stir in the fresh spinach, cooking until wilted. Slowly add ¾ jar of Classic Red from Jar Goods. Reduce the heat to low and cook another minute until all is incorporated. Remove from heat.

Add the beans and salt and pepper to taste. Add remaining Classic Red. Transfer to large ramekin, then sprinkle with shredded cheese. Bake 15 - 20 minutes until the cheese has melted and a crispy top layer has formed.

Serve immediately. Sprinkle with red pepper flakes to add a little kick or substitute Classic Spicy for a not so subtle kick.
