Vegan Vodka Curry

When you’re craving curry but aren’t looking for a long prep time or to go out to a restaurant, well, this Jar Goods version will satisfy. So many veggies! Enjoy!

2 Tbls canola oil
1 medium onion, chopped
2 Tbls red Thai curry paste
2 chicken breasts, cut into cubes (any replacement will work well to make vegan or vegetarian)
1 inch ginger root, chopped finely
1 ½ cups broccoli florets
1 ½ cups chopped carrots
1 jar Vegan Vodka
1 ½  - 2 cups chicken or vegetable stock
1 cup diced tomatoes (can be fresh or canned)
1 cup cubed red pepper
1 - 3 chilis, to suit your taste, as well as seeds if you like spice!
Salt and pepper
Lime wedges and chopped fresh basil for garnish

Heat 1 tbs oil in a large sautè pan. Add onions and curry paste. Stir often until the mixture starts to sizzle, about 5 minutes. Meanwhile, pat dry chicken breasts with paper towel and sprinkle with salt and pepper. Add to onion mixture and continue cooking until the chicken is browned on all sides. Add broccoli, carrots, ginger, red peppers, and chilis. Stir to incorporate into mixture and simmer 5 minutes more.

Add diced tomatoes, as much Jar Goods Vegan Vodka as you like, and about 3/4 of the stock. Bring to a simmer. After about 10 minutes add more stock if broth looks too thick. You will want the consistency of a thick soup. Continue cooking another 10 minutes to ensure chicken is cooked through.

Serve over basmati rice. Squeeze lime wedge and garnish with chopped fresh basil.
