Pasta with Classic Red & Sauteed Mushrooms and Olives
This simple pasta recipe can be enhanced by adding any of your favorite vegetables. Go green and add a packed cup of spinach or kale when tossing the pasta. For an even saltier taste, throw in some capers or jarred artichokes hearts.
6 - 8 white mushrooms sliced
8 oz vegan pasta
6 - 8 pitted black olives
Salt and Pepper
Vegan cheese topping
Bring a pot of water to boil. Salt the water once it begins to boil. Add any shape of your favorite pasta and cook according to packaging. Meanwhile, saute mushrooms in olive oil until golden brown. Salt & pepper to taste
Drain pasta reserving 1/4 cup of the liquid. In the saute pan add the pasta and 3/4 cup of Classic Red. Heat for 3 - 4 minutes just to warm the sauce. Add remaining 1/4 pasta liquid if necessary. Toss in the olives and plate.
Sprinkle with your favorite vegan cheese topping and serve. Add more Classic Red if desired.
