Beet + Basil Pesto Portabello "Pizzas"

4 portobello mushrooms (stemmed)
6 slices prosciutto
¾ c fresh mozzarella
Jar Goods Beet + Basil Pesto
Olive Oil
Salt & Pepper

Preheat the oven to 350. Rub each mushroom with oil olive, just enough to lightly coat. Place mushrooms on a baking sheet and bake for 12-15 minutes. You want to bake just long enough to soften each mushroom and remove excess water. Remove from oven and let cool.

Top each mushroom with a piece of prosciutto. Spoon dollops of Jar Goods Beet + Basil Pesto on top. Finally, top each mushroom with mozzarella slices. Return mushrooms to sheet and bake 8 - 10 minutes. Season as preferred and enjoy.
