Baked Cod in Classic Spicy Tomato and Caper Sauce


Serves 4

When you want tender, flaky white fish in a delicious tomato sauce, look no further. This is an incredibly easy and healthy dinner that you'll want to add to your recipe bank.

2 tablespoons butter
1 small onion, finely chopped
1 jar Classic Spicy Tomato Sauce
2 tablespoons capers
1 tablespoon Champagne vinegar
2 lbs cod fillets
Salt and pepper
Parsley, finely chopped for garnish

1.     Preheat the oven to 400°F.
2.     Heat the butter in an oven proof skillet and sauté the onion until soft, about 8-10 minutes. Add the Tomato Sauce, capers and vinegar and cook for a further 3-4 minutes until heated through.
3.     Season the cod with salt and pepper and add to the skillet, spooning some of the sauce over the fish so that it is completely covered.
4.     Bake for 10-15 minutes until flaky.  Sprinkle with parsley and serve immediately.
