These yummy zucchini pizza bites are one of our favorite snacks using Jar Goods tomato sauce! This time around, we decided to stack them up using a nonstick muffin pan. Zucchini is such a versatile vegetable that is so good for you.

To make this one of your go-to vegetarian zucchini recipes, replace the pepperoni with roasted red peppers and spinach leaves. Just be sure to include a good amount of tomato sauce and savory mozzarella cheese. You can always add your favorite pizza toppings

Zucchini pizza bites ingredient list

  • 36 slices of zucchini squash (1 large or 2 medium) 
  • 1 jar of Jar Goods Premium Classic Red tomato sauce
  • 1 cup shredded mozzarella cheese
  • 24 pieces of pepperoni
  • 12 pieces of roasted red peppers (optional)
  • 12 large spinach leaves (optional)
  • Grated parmesan cheese (optional)

How to make yummy zucchini pizza bites

Spray a 12-cup nonstick muffin pan with your cooking spray of choice. Preheat your oven to 425 degrees.

Place one zucchini slice in each muffin cup. Add a dollop or two of Jar Goods premium Classic Red tomato sauce. Top with shredded mozzarella cheese, and then a piece or two of pepperoni. Repeat the previous steps two more times to create layers of zucchini, tomato sauce, mozzarella cheese and pepperoni.

Vegetarian zucchini pizza bites:

Place one zucchini slice in each muffin cup. Add a dollop or two of Jar Goods premium Classic Red tomato sauce. Top with shredded mozzarella cheese, and then a piece or two of roasted red peppers and spinach leaves.

Repeat the previous steps two more times to create layers. Zucchini, tomato sauce, mozzarella cheese, roasted red peppers and spinach leaves.

Top with a sprinkle of grated parmesan cheese. 

Bake in the oven until golden brown and slightly crispy. You'll want to be sure the mozzarella cheese is melted. Cooking time is about 15 - 18 minutes. Remove the zucchini bites from oven and let cool.

Arrange these yummy pizza bites on a plate. Feel free to sprinkle with some Italian seasoning and red pepper (if you want a kick). Serve with a side bowl of warm tomato sauce to use for dipping.
