Zucchini Chips

For the perfect happy hour at home, set a bowl of these zucchini chips aside and crack open a jar of Classic Red. Hors d’oeuvres have never been this easy. 

  • Cooking Spray
  • 2 medium zucchinis
  • 1 tablespoons of olive oil
  • 1/4 cup Parmesan cheese
  • 1/4 teaspoon salt
  • Freshly ground black pepper
  • Paprika, to finish

Preheat the oven to 450 degrees. Line a baking sheet with aluminum foil and spray it with cooking spray.

Cut the zucchini into 1/4-inch rounds, leaving the skin on. Pour about two tablespoons of olive oil into your hands and rub your hands together. Massage olive oil onto the zucchini, making sure to evenly coat each round. Place the zucchini rounds on the baking sheet. Sprinkle with Parmesan, salt, and pepper. Remember to coat both sides. Finish with paprika on top. 

Bake the zucchini rounds until browned and crisp, 25 to 30 minutes. Serve with Classic Red as a dipping sauce.
