Shroomami Zucchini Sandwhich

It is so true that necessity is the mother of invention and necessity is exactly how this recipe was born - we refused to go to the store in the cold rain, had an almost completely barren fridge, and a hungry toddler. What resulted was such a happy accident - it was SO. TASTY.  You can try this simple sauté with any ingredients in your fridge - veggies, meats, grains - and just pop it on some good bread.  It's really no wonder, though.  Generally, when you incorporate Jar Goods Classic Tomato Sauces, it's going to be delicious :)

  • 1 sliced zucchini
  • bunch of mushrooms, sliced (your choice, used cremini here)
  • olive oil
  • pinch of dried thyme, salt, and pepper
  • sandwich bread of your choice
  • 1 jar Classic Red, Classic Spicy, or Classic Vodka
  • a bit of feta, goat, or parmesan cheese

Heat the olive oil in a skillet over medium heat. Add zucchini and sauté until soft. Add mushrooms and continue to sauté. Season with salt, pepper, and dried thyme. Add your jar of Classic Tomato Sauce and simmer 3-5 minutes. Remove the veggies and sauce from the skillet and put your bread in cut side down to toast.  Spoon the veggies and sauce onto your bread, sprinkle with the cheese of your choice, and enjoy!
